Banana Bread Cookies

Banana Bread Cookies! Soft on the inside, slightly crisp on the outside, with yummy frosting to boot!

Ingredients
  

Cookies

  • 5 Medium sized ripe bananas (3 for cookie, 2 for garnish)
  • 2 Egg
  • 1 cup Butter
  • 3 cups All-purpose flour
  • 2/3 cup White sugar
  • 1/2 cup Brown sugar
  • 1 tbsp Honey
  • 1 tbsp Vanilla extract
  • 1/4 cup Evaporated milk
  • a pinch of Cinnamon
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • Walnuts (as much as you'd like

Frosting

  • 2/3 cup Butter
  • 1 Cup Cream cheese
  • 4 Cups Powdered sugar 
  • 2 tbsp Evaporated milk

Instructions
 

Cookie

  • First brown the butter in a skillet for about 6 mins or till it starts foaming a bit at the top and shortly after turns a nice brownish-tan. Transfer into a heat resistant bowl and let the butter cool down back to solid state.
  • In the same skillet used to brown the butter, reduce 3 mashed bananas. Stir occasionally and let simmer until the liquid from the bananas has reduced, and the banana mash is slightly caramelized. Set aside and let cool
  • Once the browned butter is solid, mix together the butter, sugar and evaporated milk until it's a creamy consistency
  • Add the eggs, honey, reduces bananas, and cinnamon to the butter mixture and whisk it until everything is evenly incorporated
  • Mix together flour, salt, and baking soda
  • Add the dry flour mixture into the butter mixture, and fold them together until everything is incorporated
  • Fold in walnuts (optional)
  • Rest dough in fridge for 12 hours
  • Place generous spoonful of dough onto baking sheet
  • Bake in a 350 degree preheated oven for 12-15 minutes
  • Cool cookies for about 10 minutes (or not if your hungry a** can't wait 🤣😭)

Frosting

  • Cream together softened butter and cream cheese
  • Add in vanilla extract
  • Whisk in powdered sugar
  • Mix in evaporated milk
  • Place in fridge until ready for use

Garnish and Glaze (For the folks that like to be extra)

  • Cut 1/2 inch slices of banana
  • Pan fry banana in buttered skillet for about 4 minutes on each side or until each side is brown and slightly crisped
  • In the same skillet used to fry the bananas, deglaze the skillet with evaporated milk on low heat; add a few tbsps of evaporated milk at a time until you get a brown colored thin glaze consistency

Assembly

  • Spread frosting on cooled cookies
  • Sprinkle walnuts on top of frosted cookies
  • Drizzle cookies with glaze
  • Top cookies with a fried banana slice
