Banana Bread Cookies
Banana Bread Cookies! Soft on the inside, slightly crisp on the outside, with yummy frosting to boot!

Have you ever had banana bread and thought, “Hmm, what if this were a cookie?” Yes? Maybe? Lol ok, probably not, but that’s what you have me for. I’m here to try and mix random things that may or may not make sense and come to you with a recipe when I get tasty results. Well, today, I come bearing delicious results! These banana bread cookies scream fall but are the perfect treat all year round. (Fyi, I created it in the spring.) Also, this is my first time making a recipe post. I’m used to cooking from the heart, meaning I often cook by feeling rather than from exact measurements. Thankfully with baking desserts, I’m a bit more strict on myself with measurements because it’s hard to fix a botched dessert once it comes out of the oven. Nonetheless, some of my cooking from the heart still slips through. So, please bare with me and show your girl a little grace.

Nick Tips
- Watch your butter like a hawk while you brown it on the stove. The transition of the solid particles starting to brown happens quickly!
- Don’t be thirsty. Let the dough rest! I know it may be hard to fight the urge to immediately bake the cookie right after you finish making the dough, but allowing it to rest the full 12 hrs adds so much depth to the flavor.
- If you don’t feel like the extra effort frying banana slices and making the glaze for garnishments, you can opt for fresh banana slice to top your cookie.
- If you want to get really extra like I did, brown your butter for the frosting as well.
- Start preheating the oven a couple of minutes before you start adding cookies to your baking sheet.
